
Extra virgin olive oil
Extra virgin olive oil, a blend of Moraiole, Leccine, and Frantoio olives, with a deep green color and a scent of wild grass and artichoke. It has an intense, pleasantly spicy flavor. The climate, characterized by low winter temperatures and very hot summers, is a critical condition for olive cultivation, while also inhibiting the reproduction of the plant's main parasites. These soil and climatic conditions, relatively poor soil, and a climate at the limit of the plant's survival, allow us to produce a high-quality extra virgin olive oil, while fully respecting the natural balance.

Formats

Wine
An ancient grape variety, its grapes are carefully selected through green pruning, which involves thinning the vine while the bunches are still green. This allows the plant to concentrate its energy, allowing the remaining fruit to reach full ripeness. Our red and white wines perfectly reflect the character of the terroir with their distinctive flavors.

Red wine
In the glass, it displays a clear, well-structured ruby red color with purple highlights. The bouquet is expansive, characterized by fruity notes of cherry and strawberry, enriched with floral nuances of rose and violet. On the palate, it is soft, warm, and intense, with a pleasantly long and persistent finish. Grape Variety: Produced primarily with Sangiovese and Merlot grapes. Production Area: The grapes are harvested and selected from the estate's vineyards. Harvest: Mid-September. Vinification: Fermentation, with maceration, takes place in stainless steel at a controlled temperature of 25°C for 11 days. After malolactic fermentation, the wine ages in stainless steel for 6 months, then rests for 30 days in the bottle before bottling. Food Pairings: Perfect with savory first courses, such as pappardelle with meat sauce, it is ideal with roast chicken, red meats with vegetables, and aged cheeses. White wine
A wine characterized by a beautiful straw yellow color with evident greenish hues. On the nose, it stands out for its beautiful, delicate bouquet, with hints of fresh fruit and white flowers. On the palate, however, it is well-balanced, with a pleasant finish reminiscent of bitter almonds. Excellent as an aperitif, this wine has only one flaw: it always finishes too quickly. Don't be caught unprepared! Blend: Made primarily from Trebbiano and Malvalusia grapes. Production Area: The grapes are harvested and selected from the estate's vineyards. Harvest: Mid-September. Vinification: Fermentation: After direct pressing, the clarified grape must is fermented at 17°C in stainless steel. Aging: 12 months in stainless steel and 3 months in bottle before release. Food Pairings: Perfect with cheeses and fish, such as gnudi with butter and sage, it is ideal with vegetables and aged cheeses. Our legumes
Legumes are often combined with grains and are essential for a healthy diet, especially for providing the right amount of protein. They are used daily by vegetarians and vegans to maintain a balanced nutrient intake, as well as by those following other diets for a healthy, varied, and balanced diet. Legumes are grown using a crop rotation method.

Our chickpeas
Properties: Chickpeas are not only rich in protein, but also a source of minerals, particularly calcium, iron, phosphorus, and potassium. They also contain vitamin A and B vitamins. Excellent for bone health and for those with high cholesterol, their potassium content is believed to support heart health and good circulation. Directions: They are ideal for making vegetarian or vegan burgers to serve as a main course with vegetables. They are also excellent as a simple side dish, for pasta, and as an ingredient in soups.

Our Zolfini
Properties: Characterized by a dense, creamy texture, a delicate flavor, and a very thin skin, known as zolfino. Saved from extinction. Directions for use: Its skin is so thin that it doesn't require soaking before cooking, as it's so tender it melts in your mouth. Boiled and drizzled with Podere I' Caldino extra virgin olive oil, it's a great way to enjoy them.

Our dishes
Properties: These white beans, with a characteristic flattened shape, boast excellent nutritional values. They are rich in carbohydrates and a good source of protein. They are also low in fat, while the husk contains fiber, which plays a key role in regular bowel movements. Directions for use: Excellent when paired with grains such as pasta, rice, and similar foods to create both hot and cold soups. They also lend themselves well to creamy soups and soups enriched with light meats and fish.

Our cannellini beans
Properties: Rich in glucosides and lecithin, they are perfect for diabetics and those with a tendency to constantly build up cholesterol in the blood. They are also rich in protein, carbohydrates, and fiber, and low in fat. They also contain numerous minerals, such as phosphorus, calcium, zinc, and iron, as well as vitamins B1, B2, and B3. Directions for use: Cannellini beans are traditionally used in Tuscan cuisine; for example, "fagioli al fiasco" (flask-shaped beans) or "fagioli all'uccelletto" (sautéed beans) are very popular, and they are also used in ribollita (a soup). Our coconuts
Properties: A white, oval-shaped bean with excellent organoleptic characteristics; its flesh is delicate and floury, its skin is thin, and cooking times are shorter than those of other bean cultivars. Directions for use: Characterized by a delicate flavor, they are suitable as a side dish or to enhance hot and cold soups and mixed salads. They are also excellent simply boiled and dressed with a drizzle of extra virgin olive oil.

Directions: To prepare them, all you need is a heavy-bottomed pan, lightly greased with oil, and a lid. Crops are rotated and mulched, fertilized with organic fertilizers and green manure.
